What are water crocks and what do they do?

Water crocks are large, pottery crocks. There are two kinds - the permeable ones which allow water to seep slowly through the pores, and produce a cooling effect, and the impervious ones, which you can use to store liquid or semi-liquid preserves, such as sauerkraut.
